Peat & Sherry project

Op 30 maart 2011 werden eerste klas bourbon vaten afgevuld met heavily peated spirit. De distillery is Undisclosed en de single malt is ‘teaspooned’ met een andere malt. Is het Islay of Island? We weten het niet, de kwaliteit is in elk geval TOP! Een mooie heavily peated malt.

Maar nu de ontdekkingsreis: we laten het ene vat verder rijpen in een 1st fill Madeira cask en de ander in een 1st fill PX cask. Zo ontdekken we hoe verschillende sherryvaten geur, smaak en textuur van de whisky beinvloeden.
