Mortlach is opgericht in 1823 door James Findlater en was de eerste legale distillery in Dufftown. Zestig jaar later werd Glenfiddich opgericht door William Grant, die daarvoor jarenlang bij Mortlach werkte. In 1853 werd George Cowie mede eigenaar van Mortlach. Cowie was ingenieur, wetenschapper, onderzoeker en ondernemer. In 1896 nam zijn zoon Alexander het stokje van zijn vader over. Hij ontwierp het “2.81 distilled” proces, wat Mortlach tot op de dag van vandaag een bijzonder rijke, dikke en smaakvolle whisky maakt.

Mortlach is een belangrijk bestanddeel van de Johnnie Walker Black Label blend. Er waren zeer weinig officiele bottelingen van Mortlach, totdat eigenaar Diageo in 2014 vier officiele uitvoeringen lanceerde. Mortlach wordt daarbij als Luxury Single Malt gepresenteerd, met bijbehorende hoge prijsstelling.

2.81 distilled
Mortlach hanteert een bijzonder destillatieproces “2.81 distilled”, dit systeem is in eind 19e eeuw ontworpen door Alexander Cowie. Het levert een dikke, rijke whisky op, en de illustere bijnaam “beast of Dufftown”.

Mortlach heeft zes kopen pot stills (drie washstills en drie spiritstills), elk met een eigen vorm en afmeting. Hiermee worden drie soorten spirit gemaakt, die met elkaar gemengd worden. De spirit die uiteindelijk op het vat gaat is meer dan twee keer, maar minder dan drie keer gedestilleerd: 2,81 om precies te zijn.
