Nc’nean Distillery is opgericht in 2013 door de familie Lewis. Zij kochten eerder een groot boerenbedrijf op het schiereiland Morvern en besloten één van de gebouwen om te bouwen tot een distillery. Dochter Annabel Thomas zwaait er de scepter.

De naam Nc’nean wordt uitgesproken als “knock-NEE-anne” en is afgeleid van Neachneohain, een heksenkoningin uit de Schotse folklore. Neachneohain was een jager en beschermvrouwe van de natuur. De distillery werkt milieuvriendelijk: warmte wordt opgewekt door houtsnippers uit de omliggende bossen (geoogste bomen worden herplant) en er wordt alleen biologisch verbouwde gerst gebruikt.

Dr. Jim Swan heeft Nc’nean geadviseerd over het proces en de gebruikte materialen. Er wordt ingezet op langzame fermentatie, zodat extra esthers ontstaan. Grote lampvormige distilleerketels zorgen voor extra reflux, waardoor een lichte, fruitige spirit ontstaat.

Eén van de uitdagingen is het vinden van biologische gerst. Ten opzichte van de normale teelt worden bij biologisch geteelde gerst geen kunstmest en zo min mogelijk bestrijdingsmiddelen gebruikt. Hierdoor is de opbrengst veel lager (en de prijs hoger), maar de biodiversiteit op de akkers wordt groter: er zijn veel meer insecten, bijen, bloemen en vogels.

In maart 2017 begon Nc’nean met distilleren, de eerste whisky wordt in 2020 uitgebracht. Bij de start zijn er ook 60 vaten beschikbaar gesteld voor particuliere aankoop. De distillery biedt de keuze uit ex-wijn en ex-bourbon vaten. Wij kozen voor het ex-bourbonvat met een ligtijd van 10 jaar. Alle informatie over dit caskprogramma vind je hieronder.
