In 1896 is Aultmore Distillery gebouwd door Alexander Edward, nadat hij eerder de Craigellachie distillery bouwde. In mei 1897 begon de productie en al een jaar later werd de productiecapaciteit flink verhoogd. In 1968 verdween de maltfloor, de distillery geheel afgebroken en opnieuw opgebouwd. Er is niets van de oorspronkelijke gebouwen overgebleven. De oorspronkelijke krachtbron van Aultmore was een waterrad, deze is bewaard gebleven.

De naam Aultmore komt van het Gaelic Allt Mhor, wat ‘grote rivier’ betekent. Aultmore ligt aan de River Isla, die uiteindelijk opgaat in de river Tay. John Dewar & Sons is sinds 1923 de eigenaar en Aultmore is een belangrijk bestanddeel van de Dewar’s blends. In 2014 werd de Last Great Malts serie uitgebracht, de Aultmore 12Y en 25Y zijn daar onderdeel van.
