Daniel Szor begon in 2014 met distilleren in zijn Cotswolds Distillery. De Cotswolds is een heuvelachtig gebied in centraal Engeland. De distillery heeft een lokale insteek: de medewerkers komen uit de omliggende dorpen, het residu uit de mashtuns wordt gevoerd aan de plaatselijke kuddes en men werkt zoveel mogelijk samen met lokale partners (boeren, technici, etc.).

De distillery gebruikt alleen gerst van boeren uit de omgeving en wil op elke fles aangeven van welke boerderij de betreffende gerst afkomstig was. Het mouten gebeurt op traditionele wijze bij Warminster Maltings. In 8 rvs washbacks vindt het fermenteren plaats. Op aangeven van Jim Swan is gekozen voor een lange fermentatietijd (4 dagen), zodat een rijk, fruitig distillaat verkregen wordt.

Jim Murray (ja, die) is erg enthousiast over de newmake spirit van Cotswolds in zijn Whisky Bible 2016:

Cotswolds Distillery New Make batch no. 08/2015, bott 1 Sept 15 db (94) n23.5 t24 f23 b23.5 .
High quality new make still glistening with a coppery sheen on both nose and taste. And it is on delivery where it really stars, showing a gorgeous weight and great confidence as it maximises the malt. All spices and gristy sugars present and correct. The only thing missing is the usual cocoa dryness present on the finish of most good quality new makes. Maybe hiding behind the new still copper sharpness. 63.5%. ncf.”
