Holyrood 2019 – fresh sherry hogshead

Een fresh sherry hogshead uit het ‘inaugural year’ van Holyrood distillery. Na uitgebreid overleg met de deskundigen van Holyrood kwamen we tot de volgende order:

Flavour preference: Sherry style with light Smoke and Spice, dried fruits, spice and orange citrus from the first fill sherry hogshead to balance and sweeten the rich peat notes.

Malting approach: light 10 PPM peated malt

Yeast variety: 2 distillers/culture yeasts and ferment for 48 – 72 hours

Fermentation timing and approach: mashed gently and cooled on route to the fermentors at 18C

Distillation timing and approach: double distill and deep cut to maximise phenols – 70%ABV tot 60%ABV

Cask type and size: first fill Spanish oak Sherry Hogshead

De planning is dat ons Holyrood vat in oktober 2019 wordt afgevuld. We splitsen het vat in 60 delen van 4 flessen, de intekenprijs is € 120,- per deel. Bij botteling is nog accijns, BTW, bottel- en transportkosten verschuldigd, reken hiervoor op ongeveer € 85,- per deel (obv de tarieven 2019). De all-in prijs per fles komt daarmee op € 51,-.

We ordered a cask from Holyroad distillery, which is in its inaugural year. After an intensive consultation with the experts from Holyrood we approved the following specs:

Flavour preference: Sherry style with light Smoke and Spice, dried fruits, spice and orange citrus from the first fill sherry hogshead to balance and sweeten the rich peat notes.

Expected filling date of our Holyrood cask is in october 2019. This fresh sherry hogshead is split into 60 shares of 4 bottles, each share is € 120,- (to be paid now). When bottled in the future we will have to pay excise duty, VAT, bottling- and transportation costs. Based on tariffs march 2019 that would be € 85,- per share (to be paid in the future). The all in price per bottle is approx. € 51,-.
